Clean & Oil Your Wooden Chopping Block The Right Way

Wooden chopping blocks are the backbone of any well-functioning kitchen. They are solid, steady, and grip your knife securely as you dice an onion or hack through a thick-skinned squash. And because wood is relatively soft, they keep your knives sharper than other cutting surfaces, and act as beautiful, rustic serving platters. High quality chopping blocks are never made from single pieces of wood, the technique of bonding different blocks of wood together prevents natural warping over time.

Like any kitchen workhorse, wooden chopping blocks deserve respect, particularly when it is time to clean them. Fortunately, cleaning them thoroughly and gently is simple, and just takes a little elbow grease and a few everyday ingredients. Check out the method below and chop happily for years to come.

Avoid the Evil Dishwasher
Keep your block out of the dishwasher, which can warp the wood or dry it out so much that it cracks or splits! Keep things old school instead and hand wash.

Cleaning your Chopping Block with Salt & Lemon

After use, wash the surface of your block with liquid soap and water, but never leave your chopping block to soak in water. Soaking your block will cause the wood to warp and crack.

Giving your chopping block a good clean every month with salt and lemon is a great way to help maintain its appearance and remove stubborn stains.

Sprinkle the salt liberally over the block, then slice a lemon in half and use it to rub the salt into the block. Let the salt and lemon solution sit for approximately five minutes. Finally, clean off the block with a sponge, rinse, and dry.

The salt acts as an abrasive to lift stains and the lemon juice leaves everything smelling great.

Remove Moisture & Leave to Dry Naturally
After rinsing the soap (and salt and lemon juice) off of your block, take a dry dishtowel and give it a thorough dry. If water gets trapped in the grain, it can warp the wood. Finally stand your chopping block up to dry naturally, making sure air hits as much of the surface as possible.

Give Your Chopping Block an Oil Change
Once a month or so, hydrate your thirsty wooden block with mineral oil. Use a soft, clean cloth to spread a thin, even coat of mineral oil over the wood. Let the oil soak in for several hours for maximum benefit then wipe off any excess.
